Strange Fritters

I was trying to make hash browns but this is what we ended up with. They are weird and wonderful, crispy and gooey, salty and creamy. Try them if you dare!

115 grams instant potato mash
½ cube chicken stock
1 ½ cups boiling water
¼ cup mayonnaise
⅓ cup cornflour
1 can peas and corn (drained)
Oil for frying

Instructions

In a heatproof jug, combine the boiling water and chicken stock. Stir until dissolved completely.
Empty the potato flakes into a separate bowl. Add the boiling water and mix well, let it stand for 10mins.
Once the mixture has cooled slightly, add the mayonnaise and cornflour and stir well. Add the peas and corn and stir again until they are evenly distributed throughout the batter. You can adjust the batter to the thickness of your liking by adding more cornflour or more water
Pan fry over a medium heat until golden and slightly crispy. Enjoy!
